The 2 year thing is a bit of a question on the internets. Another time, Dean indicates it was 4 years, so we assume that a) the writers messed up and/or b) Dean visited Sam in the middle of the 4 years away.
The missing scene... again, we all assume that they don't know what they're doing. Personally, I think the car turning scene was filmed for something else, and was really Sam and Dean in the car. When in doubt, assume the editors messed things up :)
